Tasty Tuesday... On Wednesday?

Since yesterday was Valentines Day, Tasty Tuesday was postponed until today!

A few weeks ago, my friend Alexa discovered a recipe on Pinterest that she made and brought over to our girls night. I have made it TWICE in two weeks... it's that good! The original recipe is slightly different than the one I chose to make, but it's always fun to put your own personal twist on recipes!

Black Bean Salad
{served with chips or pita bread}


Ingredients:
2 15-ounce cans black beans, rinsed and drained
3 cups frozen corn
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
2 avocados, diced
2 cloves garlic, minced
2 tablespoons salt
1/4 teaspoon cayenne pepper
2 tablespoons sugar
9 tablespoons extra virgin olive oil
6 tablespoons fresh lime juice
1/2 cup chopped cilantro, plus more to garnish

Directions:
Combine all ingredients except avocados in a large bowl and mix well. Cover and chill for a few hours. Right before serving, add avocados and mix gently, being careful not to mash avocados. Garnish with a few sprigs of freshly chopped cilantro if desired. Serve at room temperature.






A couple things I learned:

1. I love bell peppers. Never would have thought!
2. I strongly dislike slicing avocados.
3. Fresh cilantro smells amaaaazaaaazing.

For slicing avocados:

Halve
Remove stone

With a butter knife slice lengthways then crossways. Pushing hard enough to reach skin nut not puncture.

With large spoon, scoop out as close to skin as possible.

They will come out perfectly cubed :)

I just love the smell of cilantro too! I know lots of people that don't like cilantro and I think that they are just plan weird. :-)
